Edwin began working at Copps Island at the age of 16 alongside Jim and it wasn’t long before he became his right hand man (and best friend). Edwin wasn’t always an oyster farmer; in fact, he was born and raised as a true cowboy working on a farm in Honduras. From herding cattle to picking oysters, Edwin knows a thing or two about hard work and what it means to live off the land.
His father, Leonidas, was Norm’s first employee and the backbone of the company’s early success. Following in his father’s footsteps, Edwin is now one of the foremen of the shop, overseeing the processing room and boat yard. In his spare time, Edwin enjoys fishing and spending time with his family.
